Greek Yogurt with Berries & Mint


This is less of a recipe and more of a “this is a really refreshing and EASY breakfast and I want to share it with you!” sort of thing.  So I hope you’re not terribly disappointed.

Greek Yogurt with Berries & Mint from 5 to 9 FoodiesWe were in a major rush this morning, and we recently stocked up on Chobani Greek yogurt, so I think you know where I’m going with this.  I used a big scoop of strawberry yogurt, a slightly smaller scoop of vanilla yogurt, and then topped with blackberries, raspberries, and blueberries.  I had mint on hand from some apple-pineapple-mint juice I had made earlier this week, and it was the perfect refreshing touch on top of the yogurt!  An easy way to chop up the mint:  roll up the leaves together, and then just slice horizontally across to make little strips.  Done!  If you have kitchen scissors, you can also roll them up the same way, and then cut little strips for those times you’re too rushed to get out the cutting board.

It cannot get much simpler than that!  Well, I suppose you could eat plain yogurt.  Or a slice of bread?  But what’s the fun in that?
