Southwest Confetti Quinoa Salad Until relatively recently I had no idea how to cook quinoa, much less say its name (keen-wah). But in a few short months is has become a full-blown obsession, among many, I admit.

The best part of this obsession is that quinoa is a super-food! Its a healthy whole grain that is prepared much like you would prepare rice and its high in protein and iron and relatively low in fat, cholesterol, and calories. Best of all though – its delicious, super easy to make, and filling!

Southwest Confetti Quinoa Salad

Southwest Confetti Quinoa Salad
{Adapted from Fit Foodie Finds}

Ingredients
1 1/2 c. quinoa, dry
3 c. water
1 can black beans, rinsed
1 c. frozen corn nibblets
1 c. cherry tomatoes, chopped
1 small red bell pepper, chopped
2 tbsp. cilantro
Juice of 1 lime
1 tsp. salt
1 tsp. black pepper
2 tbsp. olive oil
1/4 c. balsamic vinegar

Instructions

1. In a medium sauce pan combine quinoa and water and bring to a rolling boil. Reduce heat and simmer until water is totally absorbed by the quinoa (15-20 minutes). Stir occasionally.

2. Place quinoa in a large bowl and refrigerate for 1-2 hours until quinoa is cooled. Stir in the rest of the ingredients. Add additional salt and pepper to taste if desired.

Great as a side dish or a weekday lunch. Enjoy!
